True German Potato Salad - cooking recipe

Ingredients
    3 lb. boiled, sliced potatoes
    1 chopped onion
    1/2 lb. bacon
    2/3 c. water
    1/3 c. sugar (less if bacon is sugar-cured)
    1/2 c. white vinegar
    1/4 tsp. salt
    1/4 tsp. pepper
    3 to 4 Tbsp. flour
Preparation
    Saute onion and bacon together.
    Slowly add flour so as to avoid lumping.
    Add sugar, lowering heat.
    Add vinegar and water. Bring to low boil, stirring constantly (mixture looks glassy). Add potatoes (with or without skins), piece by piece, mixing well yet not mashing potatoes.
    Season to suit with salt and pepper. Serve hot or lukewarm.
    Serves six.
