Mocha Meringue Puffs - cooking recipe

Ingredients
    2 egg whites
    1/4 tsp. vanilla
    dash of salt
    1/2 c. sugar
    2 tsp. unsweetened cocoa
    2 tsp. instant espresso powder
    1/4 c. semi-sweet chocolate chips
Preparation
    Heat oven to 325\u00b0.
    In small bowl with electric mixer, beat egg whites, vanilla and salt on medium speed until foamy.
    Gradually add sugar, 1 tablespoon at a time, beating at high speed until stiff glossy peaks form.
    With small strainer, sift cocoa and espresso powder over meringue mixture; add chocolate chips.
    Gently fold into meringue.
    Drop by slightly rounded teaspoonfuls 1 inch apart onto ungreased cookie sheet.
    Bake for 18 to 20 minutes. Immediately remove from cookie sheet; cool on wire rack.
    Makes about 20 cookies.
