Kielbasa Vinaigrette - cooking recipe

Ingredients
    1 large Polish kielbasa sausage
    red wine
    1 medium onion, thinly sliced
    6 scallions, thinly sliced (white and green)
    1/4 c. parsley, finely chopped
    1 tomato, peeled, seeded and cut into thin strips
    1/4 c. mustard vinaigrette
Preparation
    Poach sausage as follows:
    Put sausage in an enamel or stainless steel skillet.
    Cover with a mixture of 1/2 red wine and 1/2 water.
    Add onion slices.
    Bring to boil; cover, lower heat and cook gently for 20 to 30 minutes.
    Cool in poaching liquid.
