Zucchini Bread - cooking recipe

Ingredients
    3 eggs
    1 c. cooking oil
    2 c. sugar
    1 tsp. vanilla
    2 c. raw grated zucchini
    1/2 c. nuts or raisins
    3 c. flour
    1 tsp. salt (optional)
    2 tsp. baking soda
    3 tsp. cinnamon
    1/4 tsp. baking powder
Preparation
    Beat eggs until foamy.
    Add oil, sugar and vanilla.
    Beat in zucchini and set aside.
    Sift flour, salt (optional), soda, cinnamon and baking powder.
    Mix together with egg mixture; add nuts and/or raisins.
    Pour into two 8 x 4-inch greased and floured pans.
    Bake at 325\u00b0 for 1 hour.
    Leave in pans 30 minutes to cool. Remove from pans and finish cooling on racks.
