Chicken Athena - cooking recipe

Ingredients
    1 lb. boneless, skinless chicken breast cut in cubes
    1 Tbsp. olive oil
    1 onion cut in chunks
    1 - 14 1/2 oz. can stewed tomatoes
    1 - 6 oz. jar marinated artichoke hearts
    1/2 c. Feta cheese, crumbled
Preparation
    In a skillet brown chicken in oil, add onion and cook 2 minutes.
    Stir in tomatoes and marinade from artichokes.
    Cook over medium heat 10 - 15 minutes or until thickened a bit, stirring frequently.
    Stir in artichoke hearts.
    Heat through. Top with Feta cheese.
    Serve over rice.
