Stuffed Roast Duck - cooking recipe

Ingredients
    2 ducks (1 1/2 lb. each)
    2 tsp. salt
    1/2 tsp. pepper
    1 bay leaf
    few celery leaves
    few sprigs parsley
    1 halved medium onion
    1 quartered carrot
    water to cover
Preparation
    Bring to boil in covered saucepan over full gas flame the ducks, salt, pepper, bay leaf, celery leaves, parsley, onion, carrot and water to cover; reduce flame to simmer (200\u00b0 to 225\u00b0 dial setting on controlled burner) and continue cooking 1 hour. Remove from flame and let stand until cold.
    Drain.
    Stuff ducks and place on rack in shallow pan.
    Place over breast of each duck 2 slices of bacon or thin salt pork.
    Roast in moderate gas oven (325\u00b0) for 20 minutes per pound.
    Makes 4 servings.
