Spanish Rice - cooking recipe

Ingredients
    1 1/2 c. white rice
    6 large tomatoes, peeled and cut into chunks
    2 very large green peppers, cut in wide strips
    2 large onions, coarsely cut into chunks
    1 to 4 cloves garlic, diced
    2 c. water
    salt to taste
Preparation
    In a large pot, bring rice and water to a simmer.
    Add remaining ingredients.
    Mix well.
    Simmer; stir often to prevent sticking.
    Add more water or tomato juice, if needed, while cooking.
    Cook 20 to 25 minutes or until rice, peppers and onions are tender.
