Ingredients

3 beaten eggs
1 1/2 c. sugar
1/2 c. butter or margarine, melted
4 tsp. lemon juice
1 tsp. vanilla
1 (3 1/2 oz.) can (1 1/3 c.) Angel Flake coconut
1 unbaked 9-inch pie shell
Preparation

Thoroughly combine eggs, sugar, butter or oleo, lemon juice and vanilla; stir in coconut.
Pour filling into unbaked pastry shell.
Bake in oven at 350\u00b0 for 40 to 45 minutes or until knife inserted halfway between center and edge comes out clean.
Cool before serving.
If desired, garnish with whipped cream and toasted coconut.
Serves 6 to 8.
