Ingredients

1/2 c. plus 2 tsp. brown sugar, firmly packed
1/2 c. margarine or unsalted butter, room temperature, softened and cut into pieces
1 large egg yolk
1 c. flour
1/4 tsp. salt
1/2 c. butterscotch chips
Preparation

Preheat oven to 350\u00b0.
Combine sugar and margarine in a mixing bowl.
Beat with an electric mixer until light and fluffy.
Add egg yolk and mix thoroughly.
Add remaining ingredients and stir until just combined.
Drop 2 tablespoons of cookie dough per cookie onto lightly buttered cookie sheets.
Space cookies 2 inches apart and flatten slightly.
Bake 20 minutes or until cookies appear dry but are soft to the touch.
Cool 3 minutes before transferring to a rack.
