Mini Chocolate Cheesecakes - cooking recipe

3 (8 oz.) pkg. cream cheese (at room temperature)
1/2 c. sugar
3 eggs
1 tsp. vanilla
8 (1 oz.) sq. semi-sweet baking chocolate
Preparation

Preheat oven to 325\u00b0. Lightly grease (2 1/2 or 2 3/4-inch) muffin pan cups; set aside.
Combine cream cheese and sugar in large bowl. Beat at medium speed of electric mixer until light and fluffy, about 2 minutes, scraping side of bowl 1 or 2 times. Add eggs and vanilla; beat until well blended, about 2 minutes.
