Vegetable Sandwiches 2 - cooking recipe

Ingredients
    2/3 c. grated carrots
    1/4 c. minced cucumber
    1/4 c. minced red or green bell pepper or both
    3 oz. cream cheese, softened
    1/4 c. minced onion
    1/4 to 1/2 c. mayonnaise
    1 Tbsp. lemon juice
    salt to taste
    1/4 c. minced celery heart
Preparation
    Blend together carrots, cucumber, onion, bell pepper and celery. Allow to drain well. Combine cream cheese, mayonnaise, lemon juice and salt, blending well. Add to vegetables, stirring until well mixed.
    Refrigerate to blend flavors at least overnight.
    Makes about 10 sandwiches or 30 finger sandwiches.
