Harvest Rice - cooking recipe

Ingredients
    1 c. thinly sliced carrots
    1 3/4 c. water
    1 c. apple juice
    2 Tbsp. lemon juice
    1 Tbsp. brown sugar
    1/2 tsp. salt (optional)
    1 c. uncooked brown rice
    1/2 tsp. cinnamon
    1/2 c. raisins
    1/3 c. green onions, sliced
    2 c. unpeeled, chopped apples
    2 Tbsp. toasted sesame seed
Preparation
    Cook carrots in water until crisp-tender, about 5 minutes. Add apple juice, lemon juice, brown sugar and salt.
    Bring to boil.
    Stir in brown rice, cinnamon and raisins.
    Reduce heat; cover and simmer until rice is tender and liquid is absorbed, about 45 minutes.
    Gently stir in green onions an apples.
    Heat through.
    Turn into serving dish.
    Top with sesame seed.
    Makes 6 servings.
