Pasta Supper(Serves 6) - cooking recipe

Ingredients
    1 large broccoli, cut into pieces
    1 small green pepper, finely chopped
    1 small onion, finely chopped
    1 1/2 lb. smoked sausage, cut into bite size
    1 tsp. oregano
    1 c. Parmesan cheese
    1 pkg. pasta
    1 stick butter, divided
    2 lb. beef round steak, trimmed and cut into 1-inch chunks
    1/4 c. vegetable oil
    1 medium onion, peeled and coarsely chopped
    1 medium green bell pepper, seeded and coarsely chopped
    1/2 tsp. dried oregano
    2 cloves garlic, peeled and crushed
    1 tsp. salt
    1/2 c. tomato sauce
    1 Tbsp. achiote
    10 to 12 pimento stuffed olives
    1 Tbsp. capers
    1 bay leaf
    1/2 c. water
    1 lb. Idaho potatoes, peeled and cubed
Preparation
    Wash meat and pat dry with paper towels.
    In a Dutch oven or heavy kettle, heat the oil, add beef chunks, onion, bell pepper, oregano and garlic.
    Stir-fry over moderate heat until meat is brown.
    Add salt, tomato sauce, achiote, olives, capers and bay leaf.
    Mix and cook for 5 minutes.
    Add water, bring to a rapid boil, cover and simmer over low heat for 30 minutes.
    Add potatoes, stir to combine and bring to a rapid boil.
    Cover and simmer for another 30 minutes.
    Serve over white or yellow rice.
