Cilantro Pesto - cooking recipe
Ingredients

2 c. fresh cilantro, stems removed
2 cloves garlic, peeled
1 c. pine nuts or walnuts
1 c. olive oil
2 c. grated Parmesan cheese
1/2 tsp. salt
1 tsp. fresh ground pepper
1 1/2 lb. medium size cooked, chilled shrimp
Preparation

Combine cilantro, garlic and nuts in a blender.
Blend for 30 seconds until smooth.
With motor running, carefully add olive oil in a steady stream.
Turn off blender and add cheese, salt and pepper.
Blend.
Serve over shrimp.
