Saucy Ground Beef Casserole - cooking recipe

Ingredients
    1/2 lb. ground beef or Italian style or breakfast pork sausage meat
    2 garlic cloves, minced
    1 medium onion, coarsely chopped
    3/4 tsp. oregano
    1/2 tsp. salt
    1/4 tsp. pepper
    1 medium eggplant (about 3/4 lb.), cut into 1-inch chunks
    1 medium zucchini (about 8 oz.), cut into 1-inch chunks
    1 (14 1/2 to 16 oz.) can stewed tomatoes
    1/4 c. tomato paste
Preparation
    In 2 1/2-quart casserole, cook beef or sausage, garlic, onion, oregano, salt and pepper, covered, on High 4 to 6 minutes, until meat loses its pink color and onion is tender-crisp, stirring to break up meat halfway through cooking.
    Stir in eggplant and zucchini.
    Cook, covered, on High 8 to 10 minutes, until vegetables are almost tender, stirring halfway through cooking.
    Stir in tomatoes and tomato paste.
    Cook, covered, 5 to 7 minutes, until vegetables are tender, stirring halfway through cooking.
    Makes 4 servings.
