Chicken And Sausage Gumbo - cooking recipe

Ingredients
    1/2 c. vegetable oil
    1 c. flour
    4 qt. water
    2 large onions, chopped
    1 c. green onions
    1/4 c. parsley, chopped
    2 ribs celery, chopped
    1 bell pepper, chopped
    salt and pepper to taste
    chicken pieces or leftover turkey
    1 lb. smoked sausage, sliced and quartered
    hot fluffy rice
Preparation
    In iron skillet, make a roux with oil and flour.
    Cook over medium heat, stirring constantly until roux is
    dark brown color. Add 1 cup of cold water to stop cooking process.
    Transfer to large gumbo pot.
    Add water and remaining ingredients.
    Boil 2 hours or until meat is tender and gumbo has thickened.
    Serve over hot rice in bowls.
