Hummingbird Cake - cooking recipe

Ingredients
    2 c. sugar
    3 c. flour
    1 tsp. salt
    1 tsp. cinnamon
    1 tsp. soda
    1 (3 1/2 oz.) can coconut
    1 1/2 c. chopped nuts (walnuts or pecans)
    2 c. diced bananas
    1/8 oz. can crushed pineapple (reserve 2 Tbsp. of juice for frosting)
    1/2 tsp. vanilla
    1 tsp. cinnamon
    1 tsp. soda
    1 1/2 c. butter flavored oil or corn oil
    3 eggs
Preparation
    Add together sugar, flour, salt, cinnamon and soda.
    Make a well and add coconut, nuts, bananas, crushed pineapple, vanilla, oil or corn oil and eggs.
    Stir to blend well the remaining ingredients.
    Do not beat.
    Pour into greased and floured tube pan or bake in 9 x 13-inch greased pan.
    Bake at 325\u00b0.
    Do not open oven door until cake has baked 1 hour, then begin testing for doneness with a toothpick:
    1 hour and 20 minutes, tube cake and 1 hour and 5 minutes, loaf pan.
