Shrimp Etouffee - cooking recipe

Ingredients
    1/4 c. vegetable oil
    1 large onion, chopped
    1 small green pepper, chopped
    1 medium rib celery, chopped
    1 lb. shrimp, shelled and deveined
    1 tsp. salt
    1/4 tsp. cayenne pepper
    1 Tbsp. all-purpose flour
    Tabasco sauce
    1 Tbsp. minced parsley
Preparation
    In a large heavy skillet, heat the oil over moderately high heat.
    Add onions, green pepper and celery; saute, stirring frequently, until onion is browned, about 15 minutes.
    Add shrimp, salt and cayenne pepper.
    Cook, stirring frequently, until shrimp turn pink, about 3 minutes.
    Sprinkle the flour over the shrimp and toss well to coat.
    Add 1/2 cup water and bring to a boil.
    Reduce the heat and simmer for 2 minutes.
    (If more gravy is desired, add another tablespoon of flour and an additional 1/2 cup water.)
    Stir in Tabasco sauce and parsley.
    Serve over rice.
