Sausage Enchiladas - cooking recipe
Ingredients

1 lb. breakfast sausage
1 small onion, chopped
1 large pkg. cream cheese
1 small pkg. cream cheese
1 can rotel tomatoes with chiles
12 to 18 flour tortillas
1 can refried beans
5 c. grated Monterey Jack Cheese
Preparation

Brown sausage and onion in skillet, drain. Pour over cream cheese in bowl. Mix until cream cheese is blended. Add rotel tomatoes and mix well. Spread tortillas with a thin layer of refried beans. Place 1/4 cup meat mixture in center with a pinch of cheese and roll up. Place in greased casserole dish. Top with cheese. Bake at 350 degrees for about 20 minutes or until cheese is melted.
