Peach Carrot Cake - cooking recipe

Ingredients
    1 egg
    1 egg white
    1 c. all-purpose flour
    1 c. sugar
    1 tsp. baking powder
    3/4 tsp. baking soda
    1/2 tsp. salt
    1 tsp. ground cinnamon
    1/2 tsp. ground nutmeg
    3/4 c. pureed figs*
    1 c. peeled, grated carrots
    1/2 c. diced peaches, drained
    1/2 c. seedless raisins
    1/4 c. pecans, chopped (optional)
    vegetable cooking spray
Preparation
    Preheat oven to 350\u00b0.
    Lightly beat together eggs in small bowl; set aside.
    Sift together flour, sugar, baking powder, soda, salt, cinnamon and nutmeg into large mixing bowl.
    Stir to blend. Add pureed figs, beaten eggs, carrots, peaches, raisins and nuts. Stir until blended.
    Turn into an 8-inch square pan sprayed with vegetable cooking spray.
    Bake 35 to 40 minutes or until cake tests done in center.
    Yields 12 squares.
