Springerle(Cookies) - cooking recipe

Ingredients
    2 tsp. crushed anise seed
    4 1/2 c. all-purpose flour, sifted before measuring
    1 tsp. double-acting baking powder
    4 eggs
    1 lb. confectioners sugar
    1 Tbsp. grated lemon peel
Preparation
    Sift together flour and baking powder.
    In separate bowl, beat eggs until light.
    Add sugar and anise seed.
    Mix well.
    Add lemon peel and flour mixture.
    Mix well.
    Chill one hour or until firm enough to handle.
    Roll dough to 1/2-inch thickness.
    Use springerle mold or your favorite cookie cutter.
    Place on cookie sheet 1/2-inch apart and leave exposed to air overnight.
    Preheat oven to 350\u00b0 and bake 30 minutes or until done.
    Store covered. Best to wait three weeks before serving.
    Will keep for months. Makes 2 1/2 dozen.
