Zucchini Relish - cooking recipe
Ingredients

10 c. zucchini, chopped
4 c. onion, chopped
2 c. green pepper, chopped
2 c. red pepper, chopped
4 c. celery, chopped
5 Tbsp. pickling salt
3 c. sugar
1 Tbsp. dry mustard
2 Tbsp. cornstarch
2 Tbsp. celery seed
1 tsp. turmeric
1 tsp. nutmeg
1/2 tsp. black pepper
2 1/2 c. white vinegar
Preparation

Cover zucchini, onion, green pepper, red pepper and celery with cold water.
Add pickling salt.
Let stand overnight.
Next day drain and rinse in cold water.
Add remaining ingredients. Cook 30 minutes.
Pack in jars and seal.
