Spectacular Squash - cooking recipe

Ingredients
    1 pkg. stuffing mix (8 oz. size; cornbread or herb)
    1 can cream of chicken soup
    1 c. sour cream
    1/2 large onion, chopped
    1 stick melted butter
    2 lb. yellow crookneck squash (6 c.)
    1 c. grated carrot
Preparation
    Combine stuffing mix with melted butter and press 1/2 of it into a 3-quart casserole dish.
    Lightly steam squash and onion until barely cooked.
    Drain thoroughly.
    Combine soup, sour cream and grated carrot.
    Fold in cooked squash and onion.
    Gently spoon mixture over stuffing in casserole dish.
    Top with remaining stuffing mix.
    Bake at 350\u00b0 for 30 minutes until stuffing browns and bubbles around the edges.
