Watermelon Rind Pickle - cooking recipe
Ingredients

1 gallon rind, peeled and cut in squares
4 qt. cold water
6 Tbsp. pickling lime
1 tsp. ground ginger
Preparation

Soak rind in cold water and pickling lime.
Next morning, rinse several times in ice water.
Place in large pot, bring to boil for 5 minutes.
Drain.
Soak again in ice water.
Drain. Cover again with cold water.
Bring to a boil.
Add 1 teaspoon ground ginger and continue cooking over medium heat for 30 minutes.
Drain.
Soak in ice water.
