Coconut Chicken - cooking recipe
Ingredients

4 pieces chicken breast (boneless, skinless)
1 c. flour
2 eggs
6 c. Japanese bread crumbs
1 c. shredded coconut
1 tsp. salt
Preparation

Pound chicken lightly; set aside. Beat eggs. Combine together bread crumbs, coconut and salt. Dredge chicken in flour; dip into beaten eggs and press firmly into crumb mixture. Repeat process for remaining chicken breasts. Deep-fry chicken in oil at 350\u00b0 until golden brown. Finish cooking in 350\u00b0 oven until it reaches internal temperature of 165\u00b0.
Serves 4.
