Blueberry-Oatmeal Muffins - cooking recipe

Ingredients
    1 c. quick cooking oats
    1 c. nonfat buttermilk
    1 c. flour
    1/4 c. sugar
    1 Tbsp. baking powder
    1/4 tsp. salt
    1/8 tsp. cinnamon
    1 egg, beaten
    1/4 c. oil
    3/4 c. frozen blueberries, thawed and drained
Preparation
    Combine oats and buttermilk; let stand 5 minutes.
    Combine flour and next 4 ingredients in a large bowl.
    Make a well in the center.
    Combine oat mixture, egg and oil; stir well.
    Add to well of dry ingredients.
    Stir until just moist.
    Stir in blueberries. Bake at 425\u00b0 for 20 minutes.
    Yield:
    16 muffins.
