Vegetable Medley - cooking recipe

Ingredients
    1 lemon
    1/3 c. diced red onion
    2 medium carrots, peeled and diced
    1 clove garlic, minced
    3 Tbsp. oil
    1 medium zucchini, diced
    1/4 tsp. ground cumin
    salt and pepper to taste
Preparation
    Grate 1/2 teaspoon peel from lemon and squeeze 1 tablespoon juice.
    In a nonstick frying pan heat 1 tablespoon oil over high heat.
    Add onions and carrots and cook, stirring until tender, about 4 minutes.
    Add zucchini and garlic.
    Cook about 4 minutes longer.
    Add cumin, 1 teaspoon salt, 1/4 teaspoon pepper and 1 teaspoon oil.
    Add the lemon peel and juice.
