"Richard'S" Chicken Bog-A-Lot - cooking recipe

Ingredients
    6 lb. chicken
    2 lb. hot pork bulk sausage
    1 lb. Hillshire smoked sausage
    2 large onions, chopped or 4 c.
    1 stalk celery, chopped or 2 c.
    5 lb. rice
    26 c. stock*
    2 Tbsp. Texas Pete
    4 Tbsp. salt
    4 Tbsp. pepper
Preparation
    Start with 28 cups of water in a large pot (this will result in 26 cups of broth*).
    Chop onions and celery and add to water. Add salt and pepper.
    Bring to boil and then add raw chicken on bone. Cook until chicken is done.
    Remove from heat.
