Stuffed Fish - cooking recipe

Ingredients
    1 1/2 lb. flounder
    3/4 c. carrots, diced (1 large)
    1 c. scallions, chopped (1 bunch)
    3/4 c. mushrooms, chopped (3 large)
    1/2 c. celery, chopped (1 stalk)
    4 Tbsp. butter or olive oil
    1 c. fresh bread crumbs (2 slices) or 3/4 c. unseasoned crumbs (dry)
    juice of 1 lemon
Preparation
    Saute vegetables in 2 tablespoons butter or oil.
    Stir in crumbs and 1/4 teaspoon salt.
    Place half of the flounder in greased (Pam) 1 1/2 quart (10 x 7-inch) glass pan. Brush with half of the lemon juice. Spoon mixture on top.
    Layer rest of fish on top of vegetable mixture. Brush balance of lemon juice on top. Drizzle with 2 tablespoons melted butter (or 2 tablespoons olive oil). Sprinkle paprika on top. Cover with aluminum foil and bake 30 minutes at 350\u00b0 or until fish flakes when tested. Serve from baking dish.
