Squash Casserole - cooking recipe

Ingredients
    1 qt. fresh yellow squash
    1 medium onion, chopped
    1 c. Ritz wheat crackers, crushed (save 1/4 c.)
    1/2 c. shredded Cheddar cheese
    2 eggs, beaten
    1/2 tsp. salt
    1/4 tsp. pepper
    6 Tbsp. margarine, divided
Preparation
    Cook squash and onion in a small amount of salted water until tender; drain. Add cracker crumbs (reserving 1/4 cup for top), cheese, eggs, salt, pepper and 3 tablespoons margarine. Spoon into a greased casserole dish (2-quart). Top with remaining cracker crumbs and margarine. Bake at 350\u00b0 for 15 minutes or until brown. Yields about 8 servings.
