Muffin Tin Meat Loaves - cooking recipe
Ingredients

1 1/2 lb. lean ground beef
1 1/2 c. zucchini, shredded
1 c. soft bread crumbs
1 egg, slightly beaten
1 t. dried Italian seasoning
1/2 t. salt
1/4 c. ketchup
Preparation

Preheat oven to 400\u00b0. In a large bowl, combine all ingredients except ketchup, mixing lightly but thoroughly.Spoon approximately 1/3 cup beef mixture into each of 12 muffin cups and press lightly to fill cups. Spread ketchup over tops. Bake 20 minutes or until centers are no longer pink. Remove meat loaves from pan. Serve with mashed potatoes, if desired. Serves 6.
