Kidney Bean Salad - cooking recipe
Ingredients

2 c. dried kidney beans
1 c. chopped celery
1 green or red sweet pepper, chopped
1/4 c. parsley
4 scallions, chopped
1/4 c. olive oil
6 Tbsp. vinegar
1 Tbsp. molasses
2 lettuce leaves
8 radishes, sliced
4 tomatoes, quartered
Preparation
-
Cook beans until soft.
Combine celery, pepper, parsley and scallions in large bowl.
Mix well vinegar and molasses in jar with lid on.
Pour over beans.
Serve on lettuce leaves and garnish with radishes and tomatoes.
