Turkey Medallions With Orange Teriyaki Sauce - cooking recipe

Ingredients
    corn oil
    1 large celery stalk, minced
    1 small onion, minced
    1/2 tsp. salt
    1/2 tsp. ground ginger
    1 lb. raw ground turkey
    2 tsp. white horseradish
    chopped parsley
    6 small carrots, sliced in 1-inch chunks
    1/4 lb. Chinese pea pods
    1/3 c. orange juice
    1 Tbsp. light teriyaki sauce
    1 Tbsp. flour
    parsley sprigs for garnish
Preparation
    Saute celery, onion, salt and ginger in oil.
    In bowl, mix turkey, horseradish and sauteed mixture plus chopped parsley.
    Make 8 patties and cook in oil.
    In 1 inch of water cook carrots about 5 minutes.
    Stir in pea pods; cover and cook 2 minutes longer.
    In cup, mix juice, teriyaki sauce, flour, 1 tablespoon chopped parsley and 1/3 cup water.
    Stir into skillet from which patties have been cooked.
    Loosen browned bits from pan, boil 1 minute.
    Place patties and vegetables on platter; pour orange over all.
    Garnish with parsley sprigs.
