Curry Chicken And Rice - cooking recipe

Ingredients
    1/2 lb. chicken
    2 Tbsp. peanut or olive oil
    1 large onion
    1 large green pepper
    1 can hominy
    1 to 1 1/2 Tbsp. Bolst's hot curry powder
    cayenne to taste
    1 can stewed or several fresh tomatoes (optional)
    2 c. water
Preparation
    Cut chicken up in small pieces and dice onion and pepper.
    In large pan, heat oil and saute chicken, onion and pepper.
    Add curry and several dashes of red pepper.
    After all slightly sauteed, add tomatoes and 2 cups water, then add hominy.
    Bring to boil, then simmer about 15 minutes.
    Serve over rice.
