Stuffed Zucchini - cooking recipe

Ingredients
    3 medium zucchini (about 8 oz. each)
    3/4 lb. lean ground beef
    1/4 c. sliced scallion
    1/2 c. sliced mushrooms
    1/2 c. chopped tomatoes
    2 Tbsp. tomato paste
    1/2 tsp. oregano
    1/2 tsp. basil
    1/4 tsp. salt
    6 Tbsp. grated Parmesan cheese
Preparation
    In a large saucepan, cook zucchini in boiling salted water for 10 minutes or until fork-tender.
    Drain and cool slightly.
