Potato And Tomato Pie - cooking recipe

Ingredients
    3 medium potatoes
    1 c. all-purpose flour
    salt and freshly ground pepper
    1/3 c. olive oil
    1 c. canned tomatoes, drained
    1/2 lb. Mozzarella cheese, diced
    1/4 c. grated Parmesan cheese
    1 Tbsp. chopped fresh oregano or 1/2 tsp. dried oregano
Preparation
    Preheat oven to hot (400\u00b0).
    Boil potatoes and mash them until very smooth.
    Mix them with the flour and season with salt and pepper to taste.
    Press the potato mixture in 1/2-inch layer in bottom of oiled shallow baking dish.
    Spoon half the oil over the potatoes.
    Arrange the tomatoes over the oil.
    Top with cheeses and sprinkle with oregano and remaining oil.
    Bake for 25 minutes, until the surface is lightly browned.
