Spicy Black-Eyed Peas - cooking recipe

Ingredients
    12 oz. pkg. dried black-eyed peas
    1 1/2 tsp. salt
    1 1/2 tsp. black pepper
    4 oz. hot sausage
    4 large cloves garlic, minced
    1 small sweet green pepper, seeded and finely chopped
    1/2 tsp. crushed red pepper
    1 small onion, chopped
    3 jalapenos, finely chopped
    1/2 tsp. ground cumin
    8 c. water
    3 slices bacon, cut up in 1/2-inch pieces
    1 1/4 tsp. chili powder
    4 tsp. paprika
    1 small sweet red pepper, seeded and finely chopped
    1 tsp. Worcestershire sauce
    1 tsp. Louisiana hot sauce
    3 c. water
    1 bay leaf
Preparation
    Wash
    and sort
    peas.
    Set
    aside.
    Brown
    sausage
    and bacon pieces; drain.
    Add
    8 cups of water and peas;
    bring to a boil. Skim off
    foam
    from
    top.
    Then add rest of ingredients, except the 3 cups of water.
    Simmer 1 hour, then add the 3 cups of water and simmer another 30 minutes.
    Remove the bay leaf and serve hot over rice or with cornbread.
