Pumpkin-Pecan Bread - cooking recipe

2 1/2 c. flour
1 c. whole wheat flour
3 c. sugar
2 tsp. baking soda
2 tsp. cinnamon
1 1/2 tsp. salt (optional)
1 tsp. nutmeg
1 c. oil
2/3 c. water
4 eggs
1 (16 oz.) can cooked, mashed pumpkin
1 c. chopped pecans
Preparation

Heat oven to 350\u00b0.
Grease bottom only of 2 (9 x 5-inch) loaf pans.
Combine flour, whole wheat flour, sugar, baking soda, cinnamon, nutmeg and salt; mix well.
In medium bowl, combine oil, water, eggs and pumpkin; mix well.
Add to flour mixture; beat for 1 minute at medium speed.
Fold in pecans.
Pour batter into pans. Bake for 60 to 70 minutes, or until toothpick inserted in middle comes out clean.
Cool 10 minutes; remove from pans.
Cool on wire rack.
