Peanut Or Pecan Brittle(Makes Approximately 5 Pounds) - cooking recipe

Ingredients
    1 c. water
    16 oz. light Karo syrup (2 c.)
    1 lb. granulated light brown sugar (2 c.)
    1 lb. white sugar (2 c.)
    1/4 to 1/2 tsp. salt
    1 stick butter
    4 c. chopped pecans or raw peanuts
    4 tsp. soda
Preparation
    Butter 4 large cookie sheets.
    Butter your 5 or 6-quart saucepan.
    Mix all ingredients except nuts.
    Heat on medium or a little above medium.
    With candy thermometer in pan, cook until it reaches 275\u00b0, stirring constantly.
    Stir in nuts.
    Continue cooking until it reaches 295\u00b0.
    No more!
    Remove from heat and instantly stir in baking soda until mixture foams up.
    Quickly pour on buttered cookie sheets as thin as possible without spreading with spoon.
    Pour out only.
