Sour Cream Potato Casserole - cooking recipe
Ingredients

6 medium-large baking potatoes
16 oz. sour cream
1 1/2 c. grated cheese
1 stick melted margarine
1/4 c. chopped green onion
salt and pepper to taste
grated Cheddar for topping
Preparation

Boil potatoes until fork-tender.
Refrigerate overnight.
Grate potatoes, no need to peel them, the skins will fall off.
Saute the green onions in the melted margarine, just until soft.
Add all ingredients to potatoes.
Mix gently but thoroughly and put in a large baking dish.
Top with more grated Cheddar cheese.
Bake at 350\u00b0 for 25 minutes.
Serves 10 to 12.
