Chicken Mandarin - cooking recipe

Ingredients
    4 whole chicken breasts, boned
    1 large green pepper
    6 green onions
    2 Tbsp. oil
    1 (13 3/4 oz.) can chicken broth
    1 (11 oz.) can Mandarin oranges
    1/4 c. brown sugar
    1/4 c. soy sauce
    3 Tbsp. vinegar
    1/3 c. cornstarch
    1/4 tsp. ground ginger
    hot cooked rice
    soy sauce
Preparation
    Cut chicken and green pepper into 1/2-inch wide strips; bias-slice green onions.
    In wok, electric skillet or large skillet, quick cook and stir chicken strips over medium-high heat in hot oil until browned.
    Add green pepper strips, sliced onion and chicken broth.
    Bring mixture to a boil.
    Reduce heat; cover. Cook 2 to 3 minutes.
    Meanwhile, drain Mandarin oranges, brown sugar, soy sauce and vinegar; slowly blend into cornstarch and ginger.
    Add brown sugar mixture to chicken mixture.
    Cook, stirring constantly until mixture is thickened and bubbly.
    Stir in Mandarin oranges; cover and heat through.
    Serve chicken mixture over hot cooked rice.
    Serves 8.
