Ponnukokur Meopeyttum Rjoma(Icelantic Pancakes With Whipped Cream) - cooking recipe

Ingredients

3 c. flour
4 eggs, separated and whites beaten
3 Tbsp. butter, melted
1/2 tsp. baking soda
1/2 tsp. baking powder
1 tsp. vanilla essence
2 1/2 to 3 c. milk

Preparation

Beat together all ingredients and mix in the stiff beaten egg whites lastly.
Bake paper thin on a hot cast-iron griddle. Spread with preserves, jam or jelly and 1 tablespoon whipped cream.
Fold into triangles.
Serve with afternoon coffee or as dessert.
