Tomato-Rice Meatballs - cooking recipe
Ingredients

1 lb. ground beef
1 c. raw precooked rice
2 1/2 c. tomato juice
1 large egg
3 Tbsp. grated onion
3/4 tsp. salt
1/2 tsp. pepper
1/2 tsp. oregano leaves
1 tsp. granulated sugar
2 Tbsp. chopped fresh parsley
Preparation

Mix meat, rice, 1/2 cup tomato juice, egg, onion, salt, pepper and 1/4 teaspoon oregano in a large bowl.
Mix until well blended. Shape into 16 balls, using 2 tablespoons mixture for each. Arrange in a single layer in a large skillet or shallow pot.
Stir sugar and the remaining oregano into the remaining 2 cups tomato juice and pour over meatballs.
Cover and bring to a boil over medium-high heat.
Reduce to low and cook for 20 minutes.
Uncover and simmer 5 minutes longer.
Spoon sauce over meatballs 2 or 3 times.
Makes 6 regular or 16 buffet serving meatballs with sauce.
