Ingredients

2 1/4 cups flour
3 tablespoons sugar
1/2 teaspoon salt
6 tablespoons butter, melted
2 eggs, lightly beaten
1 teaspoon vanilla
2 teaspoons orange rind, freshly grated
1 tablespoon orange juice
1 can beer
Preparation

In large bowl combine flour, sugar and salt.
Melt butter and let it cool.
Add all remaining ingredients, including butter, to flour mixture all at once.
Beat until smooth.
Set batter aside (at room temperature) and let rest for at least 1 hour before baking.
Stir batter gently before using.
Bake as directed.
Top with fresh fruit and whipped cream.
