Rice Jardin - cooking recipe

Ingredients
    3/4 c. chopped onion
    1 lb. thinly sliced zucchini
    3 Tbsp. margarine
    1 c. canned corn, drained
    1 c. tomatoes, chopped (fresh or canned)
    3 c. cooked rice
    1 1/2 tsp. salt
    1/4 tsp. pepper
    1/4 tsp. coriander
    1/4 tsp. oregano
Preparation
    Saute onion and zucchini in butter until tender.
    Add remaining ingredients and cover.
    Simmer for 15 minutes.
    Makes 6 servings.
