Finnish Nisu - cooking recipe
Ingredients

2 c. milk, scalded
2 pkg. dry active yeast
1/2 c. warm water
1 tsp. sugar
3/4 c. sugar
1 tsp. salt
4 eggs (at room temperature)
1/2 c. margarine
7 to 8 c. flour
1/2 tsp. ground cardamon
Preparation

Scald milk; add margarine, 3/4 cup sugar and salt.
Cool to lukewarm.
In a large bowl, dissolve yeast and 1 teaspoon sugar to warm water.
Allow to set for 5 minutes or until foamy.
Beat eggs; add eggs and lukewarm milk mixture to yeast.
Blend well. Add 2 cups flour and ground cardamon; beat well.
Gradually add remaining flour until dough is easy to handle.
Knead on a floured surface until smooth and satiny.
Place dough in a greased bowl, turning to grease top.
Cover; let rise free from draft until doubled, about 1 hour.
