Vegetable Cheese Linguine - cooking recipe

Ingredients
    vegetable cooking spray
    4 oz. fresh shiitake mushrooms, sliced
    1/4 c. sliced green onions
    1 c. torn fresh spinach
    1 c. seeded diced plum tomatoes
    1/4 c. minced fresh parsley
    2 Tbsp. canned low-sodium chicken broth (undiluted)
    3 oz. linguine, uncooked
    3 Tbsp. fresh grated Parmesan cheese
Preparation
    Coat a large nonstick skillet with cooking spray; place over medium-high heat until hot.
    Add mushrooms and green onions; saute 3 minutes.
    Add spinach, tomatoes, parsley and chicken broth; cook 1 minute.
    Set aside and keep warm.
    Cook pasta according to package directions, omitting salt and fat; drain.
    Place pasta in a large bowl; add cheese, tossing gently.
    Serve immediately.
    Yield: 2 servings (240 calories per 2 cup serving).
