Harvest Applesauce - cooking recipe

Ingredients
    8 lb. cooking apples, cored and quartered
    2 c. water
    10-inch stick cinnamon (optional)
    1 1/2 c. sugar
Preparation
    Combine apples, water and (if desired) cinnamon in an 8 to 10-inch quart kettle.
    Bring to a boil; reduce heat.
    Simmer, covered, for 15 to 20 minutes, stirring often.
    Remove cinnamon. Press apples through a food mill or sieve.
    Return pulp to kettle. Stir in sugar.
    If necessary, add 1/2 to 1 cup water for desired consistency.
    Bring to boil.
    Makes 6 pints.
