Ingredients

2 eggs
2/3 c. vegetable oil
2 tsp. vanilla
1 tsp. grated lemon rind
3/4 c. sugar
2 c. flour
2 tsp. baking powder
1/2 tsp. salt
Preparation

Heat oven to 400\u00b0.
Beat eggs with fork.
Stir in oil, vanilla and rind.
Blend in sugar until mixture thickens.
Sift together flour, baking powder and salt.
Stir into oil mixture.
Drop by teaspoonfuls about 2 inches apart on ungreased baking sheet. Flatten with greased bottom of glass dipped in sugar.
Bake 8 to 10 minutes or until a delicate brown.
Remove from baking sheet immediately.
Makes about 4 dozen.
