Onion Topped Pot Roast - cooking recipe

Ingredients
    1 (2 lb.) lean boneless round roast
    vegetable cooking spray
    1/4 tsp. pepper
    2 cloves garlic
    1 c. coarsely chopped onion
    1/2 c. Burgundy or other dry red wine
    1/2 c. canned (no salt) beef broth
    1/2 c. tomato juice or ketchup (no salt)
    1/2 tsp. salt
    1 c. water
    small potatoes and baby carrots
Preparation
    Trim fat from roast.
    Coat a Dutch oven with vegetable cooking spray.
    Place over medium-high heat until hot. Add roast; brown on all sides.
    Remove roast from pan; sprinkle with pepper and set roast aside.
    Wipe drippings from pan with paper towel.
